Muscadine Sorbet Recipe
Just finished picking the last of this years Muscadine Grapes and wanted to share the best sorbet recipe we have found for enjoying them. In a large vessel add 5 cups of grapes to 1 cup of sugar and 2 cups of fresh water. Mash the grapes to break the skins and bring the ingredients to a simmer for 15 minutes stirring and making sure that all grapes were crushed to extract maximum flavor. Allow the grapes to cool for 15 minutes. Juice one lemon and strain into a container. Add 3/4 Cup of muscadine wine to the lemon juice or, for a non alcoholic version, substitute 1 Cup of a lemon lime carbonated drink for the lemon juice and wine mixture. When the cooked grapes cool, pour the cooked grapes and juice into a strainer over a large container and use a spatula to get as much juice as you can out. Add the lemon/wine or the carbonated drink to the cooled juice, cover and place in the refrigerator to chill. Use an ice cream maker as directed to finish your sorbet or simply place in the freezer for an icy less refined but still flavor filled version. A cup of the juice may also added to a standard vanilla home made ice cream recipe for an unusual taste and color culinary experience. Enjoy.
